Kuih Bakar

I finally did kuih bakar pandan! I bought the mould ages ago and after making home made pandan extract I finally did it. Haha. I tried both cooking on the pan on top of the stove and by oven, and the stove version is much better. Anyway I kinda overcooked the one in the oven and it stuck to the pan. 

Husband told me about how his late grandmother used to make these over the stove and he loved it so much, and I've been wanting to recreate it even though she didn't leave behind any recipe and I did not get the chance to meet her. And I'm proud to say Husband loves it! Totally made my day :)

The recipe is super simple, I memorised it already! I got it from Azie Kitchen, she tried it a few times and loved it and the recipe is easy so I gave it a try.

1 cup coconut milk (not Kara cream, I used Ayam brand low fat coconut milk)
1 cup flour
1 cup sugar
1 cup pandan juice (2-3 tbsp thick pandan extract + water)
3 eggs

Mix them all up and make sure no lumps. If there's still bit of flour lumps it's okay cos it will melt away when cooking.

Bubbles forming. I realise if it's cooking on lower fire, it won't bubble and will produce the dense texture of a kuih bakar, if it bubbles like this it's like pancakes! Haha


Ta-da!! Husband approved! Yay!! No pictures of the baked one cos forget it I'm not gonna bake kuih bakar hahaha.

I have many other posts of cooks and bakes but I have been lagging behind and so I'll just skip those haha!

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Apam Balik

I love apam balik. The soft one, with lots of corn. So when @khairulaming posted this on his instagram, I bookmarked it. The recipe is not too much until you get sick of eating apam balik, but I do feel it needs some tweaks to get the pancake king version. But not bad for a first try. 2 cups flour 1/2 cup sugar 1 tsp baking powder 1/2 tsp baking soda 2 tbsp melted butter 1 1/4 cups water 1 egg Additional butter for the pan I do feel it needs some salt, more sugar and I shouldn't have liberally made it so thick HAHA. The pan is important too, I kinda burnt some parts of the pancake. Got them bubbles!! This recipe made 2 large pancakes. Also, the filling needs to be sprinkled with sugar liberally (read: 3 tbsp or so), my first try wasn't enough. Pancake was soft even for the next few days after that (kept in the fridge then reheated in the microwave). Husband found it to be acceptable, but I was kinda not okay with it but ohwells. Lontong Goreng Tomyam

When Husband's not around, I become more hardworking HAHAHA. I clean more, I cook more. Saturday I made lontong goreng tomyam for breakfast, and yesterday I made my first ever chicken rice. I even have ingredients to make aglio olio, which I think I'll make either tonight or early tomorrow morning for breakfast. The lontong goreng was a pure experiment, no inferences from recipes and all but it turned out good. Not sure if it's something Husband would eat haha! Lontong Goreng Tomyam 1 packet lontong instant Adabi, cut in cubes 4 tbsp tomyam paste 2 eggs, pre-scrambled Handful of mushrooms Chicken breast, sliced Coriander leaves (I didn't have lemongrass or lime leaves) 1/2-1 tsp salt Fry the tomyam paste in some oil, then add the mushrooms and chicken to cook them.
