Accidental Recipe - Lemak Rendang Cili Padi

So today was supposed to be day 3 or 29 but I overslept. Bummer.

Junior has been disturbing my sleep a lot lately. He doesn't really sleep in the day, and at night, he can wake up every hour, sometimes a few times in an hour. Long gone are the days I had uninterrupted sleep.

Yesterday Other Half wanted to eat lemak cili padi again after my successful lemak cili padi tenggiri attempt. Haha. But he wanted to cook it this time round, so I can attend to our little mister cranky and feed him dinner.

I prepared all the ingredients, cut them nicely and put into bowls for him to cook. This time round I added more red chili cos I wanted to finish them and they weren't hot anyway so might as well. And more cili padi too!! Other Half prefers to blend everything, easy peasy. I on the other hand, prefer to tumbuk the chili using batu lesung just like my mum does it. To me the flavours kinda disappear when you blend. Hence more chili? Hahaha. So I let Other Half cook, and he wanted to cook the chicken in the lemak itself instead of pre-frying the chicken. The problem with this is that the coconut milk will 'break oil' if you don't stir often, a consistency I didn't want. When I came to check, true enough the coconut milk curdled, and the pot was burnt! But guess what! Haha! Lemak became rendang?! Hahahaha! but luckily the taste wasn't that bad. In fact it was tasty! So from lemak it became halfway of a rendang? Hahaha!

Ingredients:
7 pieces chicken
1 lemongrass, cut into 4 dititik
2 medium onions
5 red chili
15 cili padi
Half a small carton coconut cream Kara
Tumeric for colour, & salt for taste
Lime leaves

Haha this is the second recipe we made our own, this time by accident. I love it when we come up with our own recipes. Makes cooking special ♥ This, I shall call it! Lemak Rendang Cili Padi! :)

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
