I've tried a few times to perfect this, and I think I'm getting close! The trick is to use more santan, more flour, less liquid. Also, I cooked it over the stove first before putting it in the oven.
Kuih Bakar Pandan
2/3 cup + 1 tbsp flour
2/3 cup sugar
2/3 cup coconut cream
2/3 cup pandan juice + coconut milk
2 eggs
Heat the pan over the stove. Pour batter in and cover the top. Cook for a few minutes until the sides are cooked and doesn't stick to the pan. Put it in the oven at 180 degrees Celsius for about 45 minutes, depending on how thick the batter.
