Apple Crumble Cake

I love apples in cakes but sometimes the amount of apple is just too little. I had 6 apples to use up, and I figured, why not try replicate Swensen's apple crumble!

So I searched for apple crumble cake, which some call the German apple cake. This recipe is by allrecipes UK.

Apple Crumble Cake

For the cake base:
100g butter (I used 30g butter, 70g oil cos I was lazy to thaw more butter)
100g brown sugar
200g flour
1 tbsp baking powder
3 eggs

Apple layer:
6 apples, peeled and diced
sprinkle of cinnamon
Juice of 1/2 lemon

Crumble top:
125g butter
125g sugar (can reduce to 100 next time)
150g flour

  1. Mix the cake base like a normal cake/muffin method and pour into an 8 or 9 inch springform pan lined with baking paper. Important to always line the tin!
  2. Mix the apples with the cinnamon and juice, then layer over the cake base. You can press in the apples into the cake base so that the cake won't be apple-less haha.
  3. Using your fingers, mix the crumble ingredients together. I was expecting powdery crumbs but the butter was soft so it became like a cookie batter. Spread over the apple layer by separating and creating the crumble effect.
  4. Bake for 45-50 (I used 50) minutes at 180 degrees Celsius.

Best eaten on the spot, I kept stored in an airtight container, the crumble top was still okay but some bits look moist. I still have tart shells to use, I'd probably make apple tarts the next time round and top with this recipe's crumb topping cos it's just yummeh. 

Anyway this is Husband-approved! He usually won't eat weird looking stuff but he likes this one!

In other news I had a very frustrating time teaching my boy how to read!! And my little girl gave me a shock when I saw her standing on the sofa leaning backwards. She climbed the sofa on her own!

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
