Laksa Goreng & Buttermilk Chicken Wings

Yesterday night I was still on my hardworking cook streak and so I fried laksa mum's style to be eaten with marinated chicken wings this morning. I always prepare sahur the night before because I know I can't bear to wake up at 4 to cook in a rush. Haha.

My mum's laksa goreng is something like bee hoon goreng taucho, and I love it a lot. Got the recipe from her and this is the second time I'm making them. The first time I didn't have taucho and it was a little too salty.

This time round although I have taucho I still didn't have vegetables haha. Oh wells. A better try than the first, but still not perfect yet!

Laksa Goreng Taucho

420g laksa noodles (because the packet is in 420g haha), washed
1 onion, sliced
4 tbsp chili paste
2-3 tbsp taucho, try not to take the water, just the beans
1 sq cm belacan
1 tbsp sugar
3 tbsp udang kering, soaked for a while
Prawns. scrambled eggs (3) and sliced fishballs
  1. Tumbuk the taucho, belacan and udang kering using pestle & mortar until it becomes a paste.
  2. Fry the sliced onions in oil until fragrant and soft.
  3. Add in chili paste and fry till cooked.
  4. Add in the taucho belacan and udang kering paste and fry. If it gets too dry, add a bit of water.
  5. Once mixed, fry in the prawns and fishballs first until cooked, then the eggs. If there's vege add vege here as well.
  6. Add in the noodles and fry till well mixed. 
I didn't add in any salt because the taucho was already salty, and for this amount I feel like the saltiness is just fine.

I marinated chicken wings over the weekend using buttermilk and Husband said they're tasty! Yay! Didn't snap pictures of it and my marinade was more of agaration, but roughly here's what I used:

Buttermilk Fried Chicken Wings

1 kg chicken wings
1 cup buttermilk
1 heapful tbsp each chili powder, cumin powder, cardamom powder (can't remember how much I used)
1 tsp salt
  1. Mix them all in a ziploc bag overnight.
  2. Before frying, dip the wings in flour.
  3. Yumyum! :)

Husband said I didn't have to cook but I feel I should prepare proper meals. Good practice for me too! And it's not every night I cook up a storm. Tonight I shall not cook, because there's still laksa goreng for me and marinated chicken wings that Husband can eat with rice. So far I'm getting the hang of it :)

I made another batch of banana almond dates smoothie because I think I need 2 servings a day, 1 at night and 1 in the morning. I tend to get shivers after I eat, and shivers aren't a good thing so I'll up my protein and complex sugar intake too.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
