Semolina Pudding

Very very lazy Monday morning today.

Cousin got married over the weekend! Junior was in a good mood for both days, surrounded by family which he loves.


This was after the nikah at the girl's side. He was happily making this cute pose and laughing at himself haha.


My little king, slightly sleepy yet still wanted to pose with his crown.

Managed to slot in semolina pudding on Saturday morning, finally I got to make some. It's kinda hard to find a recipe online cos there's German version, Indian version and others as well. Few weeks ago I came across a recipe book by an Indian/Pakistani Singaporean and the semolina pudding looks like what I was looking for so I tried it out!

Sadly I didn't have rose water so the Indian flavour fell flat. Or maybe I should add in more cardamoms next time.

Semolina Pudding, by Liza Kassim

900ml water
1 cup sugar
2 tsp rose water (I didn't have this)
1 pandan leaf (Didn't have this either)
2-3 cardamoms
400ml evaporated milk (1 can)
1/4 tsp salt
2-3 drops colouring (I omitted)
1/2 cup almonds + 1/4 cup water blended into a paste
150g semolina

  1. Heat the water, sugar, rose water, pandan leaf and cardamoms until it comes to a boiling point.
  2. Reduce the heat to a simmer and slowly add the almond paste, salt, milk and colouring. Don't let mixture come to a boil.
  3. Add in the semolina bit by bit. Once the semolina begins to thicken, take off from the heat.
  4. Garnish with almonds and raisins.
Not bad for my first try, and I've been having it for breakfast hahaha. Next time I shall use the rose water and see if it makes a difference.

Makes 3 of the bigger ikea containers, plus some leftovers in the bowl (picture above).

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
