Hot Weekend

Good morning! We had a good weekend, but it was really really hot to the point where I ironed clothes in aircon and with the fan on haha. Also! It's the start of my 3rd trimester yay! And what a way to start 3rd trimester than a dream about giving birth. Such a tiring dream -_-

Saturday morning I cooked an early lunch for Husband's korma ayam brunch (yup repeat telecast), and later I made apple raisin muffins which he approves!! Seldom does he approve fruit related bakes so this is an achievement! He did ask though if eating that qualifies eating fruit. I would like to think so too ahhahaha.


I've made apple cupcakes using this moist apple cake recipe! I've used this before, in an earlier post. Totally love it. I added raisins as well for a sweeter bite. Would have been nice to have walnuts too.

Moist Apple Mini Cakes
4 apples, peeled cored & diced
3/4 tbsp cinnamon
3/4 tbsp sugar (supposed to be 3 but I followed wrongly but still turned out fine with less sugar)
1 1/2 cups flour (I cleared out my self raising flour 3/4 cup and remaining 3/4 cup I used cake flour)
1/2 tbsp baking powder
1/2 cup vegetable oil
1 cup sugar
1/4 cup milk (supposed to use orange juice)
Vanilla powder
2 eggs
Handful of raisins

Dice the apples and put them in a bowl. Add the cinnamon powder and 3/4 tbsp sugar and mix well with the diced apples.

In a large mixing bowl, add the sugar, flour, baking powder, vanilla powder and stir. In a measuring cup, measure out the oil, add eggs and milk and mix well. Pour the wet ingredients into the dry ingredient bowl and mix till combined.

Add in the diced apples and raisins, transfer to a cupcake pan and bake at 170 degrees Celsius for 24 minutes. Makes 20 cupcakes.

My little baker was upset when he realised I baked and didn't get him involved. So at the last minute I let him fill up the cupcake liners haha.

Here's a photo of Junior sleeping in the bus on the way to my mum's. He was so tired yet he didn't want to sleep, and finally caved in even though the bus ride was about 10 minutes. Plus it was really really hot.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
