Eating Healthy

Eating healthy is not interesting at all. I'm starting to get bored. No wonder my grandmother can't stand being on the strict diet that she has to adhere to.

Since we've found out my baby is big about a month ago, I've been trying to eat proper breakfasts and snacks so that neither the baby or I will gain unnecessary weight. No more canteen breakfasts (I cheated on 2 days so far but I'm still proud of the fact that it's only 2 days haha), cut down on chocolates and cakes and replaced with apples. So far my weight has not changed for 5 weeks now even though my belly is growing and I've found that apples really do help with appetite and managing your glucose. By far the best snack I've discovered so far! I've prepared breakfast of mostly wraps with marinated chicken or scrambled eggs and lots of salad. Good amount of protein with minimal carbs.

But today I am starting to feel bored of healthy food. I am craving for potato chips with sour cream and onion flavour. I want to eat cakes and deep fried stuff. Yesterday I had rojak mama for lunch too good to avoid hehe.

I've already stuffed my stomach with breakfast, an apple and a muesli bar. I hope I will have a sorta healthy lunch later haha. Need to keep the momentum going!!

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Maybe when I was making lava cake . Daiso is evil. It's so cheap you just feel like coming back again! Oh and did I mention there's a $2 weighing scale?! Measures up to a kilo but that's quite alright for baking isn't it! I mean, $2!! Dirt cheap lah. Not sure about the accuracy though. Didn't do much cleaning last weekend, very much spent lazing around at home just like what weekends should be like. I love being at ho...

Apam Balik

I love apam balik. The soft one, with lots of corn. So when @khairulaming posted this on his instagram, I bookmarked it. The recipe is not too much until you get sick of eating apam balik, but I do feel it needs some tweaks to get the pancake king version. But not bad for a first try. 2 cups flour 1/2 cup sugar 1 tsp baking powder 1/2 tsp baking soda 2 tbsp melted butter 1 1/4 cups water 1 egg Additional butter for the pan I do feel it needs some salt, more sugar and I shouldn't have liberally made it so thick HAHA. The pan is important too, I kinda burnt some parts of the pancake. Got them bubbles!! This recipe made 2 large pancakes. Also, the filling needs to be sprinkled with sugar liberally (read: 3 tbsp or so), my first try wasn't enough. Pancake was soft even for the next few days after that (kept in the fridge then reheated in the microwave). Husband found it to be acceptable, but I was kinda not okay with it but ohwells. I can tweak it ...

Lontong Goreng Tomyam

When Husband's not around, I become more hardworking HAHAHA. I clean more, I cook more. Saturday I made lontong goreng tomyam for breakfast, and yesterday I made my first ever chicken rice. I even have ingredients to make aglio olio, which I think I'll make either tonight or early tomorrow morning for breakfast. The lontong goreng was a pure experiment, no inferences from recipes and all but it turned out good. Not sure if it's something Husband would eat haha! Lontong Goreng Tomyam 1 packet lontong instant Adabi, cut in cubes 4 tbsp tomyam paste 2 eggs, pre-scrambled Handful of mushrooms Chicken breast, sliced Coriander leaves (I didn't have lemongrass or lime leaves) 1/2-1 tsp salt Fry the tomyam paste in some oil, then add the mushrooms and chicken to cook them. Add some water so the paste doesn't dry up. Add in the scrambled eggs then the lontong cubes and fry until mixed well. For yesterday's chicken rice, I adapted slightly from a reci...
