Salmon Baked Rice

I made my first ever baked rice last Sunday. All in the name of having salmon incorporated in my meals. The first recipe I googled used milk, and so I settled for that! Subsequently I found recipes with cream but I don't need the added fat. Who does, anyway. 

So here's the link to the original recipe. I always trust Australian and British recipe sites to give good food. Haha.

Salmon Baked Rice

15g butter
1 cup milk
220g salmon, cooked
1 1/2 cups cooked white rice
1 tbsp flour
About 1 cup grated cheese (I used Perfect Bake mix)
1/2 head of cauliflower
Cilantro

Melt butter in saucepan till bubbling, then add in flour. Mix well. Add in milk 1/4 at a time and bring to a boil. Once mixture thickens, turn off the stove and add in 1/4 cup cheese. 


Layer in a 7 inch round pan, 1/2 of the rice, cauliflower and fish. Pour some of the milk mixture and sprinkle cheese on top, and repeat for the 2nd layer. 


Add more cheese for the top layer! Bake for about 25 minutes. Oh I sprinkled black pepper before adding the cheese I think. Just in case it'll be muak.


Ta-da! Lovely looking cheese crust! And the inside is soft and moist, the rice absorbed the sauce yay!



Of course I had to try it, and it's kinda good! I regretted not baking more cauliflower cos it's such a good complement, and more cilantro.

Oh and here's the baked salmon! I was kinda desperate so I just googled for a simple baked salmon recipe to see how it's cooked and the rest are by agaration. I know I baked at 230 degrees Celsius (never used that high before!). Seasoned them with black pepper, paprika, chopped ginger, cilantro and my fried chicken wings mix which I have no idea how to get the exact mix again. Haha. All I remember is ketumbar, jintan, black pepper, paprika, some garam masala and a bit of tumeric.



Can't remember how long I baked these, probably 20 minutes? Or 30. Not sure haha. All trial and error!

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
