I Only Look Forward to Weekends

It's only Monday but I'm looking forward to the weekend. Just had a great weekend which started off on Friday with a long overdue date with Other Half. In our daily routined lives and busy work schedule, we tend to forget how to have fun and dates like these are meaningful and necessary reminders :)

Back to planning for this weekend! Besides weddings (yup the season's here again), I have thought of a couple of things to do, especially with Junior.

1) Apple cupcakes. I have like 7 apples at home, 5 of which are green and bought for the sole intention of baking no way am I going to eat them raw haha, so off as apple cakes they go! I'm going to repeat the recipe I used before since it was a success. Since I'm going to chop the apples, I think I'll get Junior involved so he can play with the apples and batter :)

2) Go to the library. I have to get for us travel books on Lombok. Have not done much research as a dutiful travel planner and besides, I would really want to know the place other than snorkelling cos that's just not my cup of tea hahaha. Need to get Junior accustomed to the library too. Besides, I think he loves the bus rides we have hahaha.

3) Bake a little butter cake for The Husband because he complains I bake everything but his fave. Hahaha. Okay okay I hear you ;)

That shall cover Saturday. Sunday is weddings and there's family day! Hope it doesn't rain. We wanna bring Junior to see loads of fish in a mega huge tank in Sentosa and maybe play with sand if the beach isn't crowded.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Apam Balik

I love apam balik. The soft one, with lots of corn. So when @khairulaming posted this on his instagram, I bookmarked it. The recipe is not too much until you get sick of eating apam balik, but I do feel it needs some tweaks to get the pancake king version. But not bad for a first try. 2 cups flour 1/2 cup sugar 1 tsp baking powder 1/2 tsp baking soda 2 tbsp melted butter 1 1/4 cups water 1 egg Additional butter for the pan I do feel it needs some salt, more sugar and I shouldn't have liberally made it so thick HAHA. The pan is important too, I kinda burnt some parts of the pancake. Got them bubbles!! This recipe made 2 large pancakes. Also, the filling needs to be sprinkled with sugar liberally (read: 3 tbsp or so), my first try wasn't enough. Pancake was soft even for the next few days after that (kept in the fridge then reheated in the microwave). Husband found it to be acceptable, but I was kinda not okay with it but ohwells. Lontong Goreng Tomyam

When Husband's not around, I become more hardworking HAHAHA. I clean more, I cook more. Saturday I made lontong goreng tomyam for breakfast, and yesterday I made my first ever chicken rice. I even have ingredients to make aglio olio, which I think I'll make either tonight or early tomorrow morning for breakfast. The lontong goreng was a pure experiment, no inferences from recipes and all but it turned out good. Not sure if it's something Husband would eat haha! Lontong Goreng Tomyam 1 packet lontong instant Adabi, cut in cubes 4 tbsp tomyam paste 2 eggs, pre-scrambled Handful of mushrooms Chicken breast, sliced Coriander leaves (I didn't have lemongrass or lime leaves) 1/2-1 tsp salt Fry the tomyam paste in some oil, then add the mushrooms and chicken to cook them.
