Welcome Home Cake

Husband's home YAY!! But he was kinda knocked out from exhaustion and got sick too, and so I did lotsa cleaning over the weekend. Junior is glad to have his daddy back, he's such a happy boy :)

My Sundays are back i.e. the usual sneaking-in-a-bake in the morning while Husband is asleep hehe. Made a welcome home cake for Husband! Also an excuse to try my new heritage bundt pan, my one true love in the baking pan world. Just look at it! It is just. Gorgeous. Totally worth the $52 I splurged. If I have a daughter I'll pass it down to her. HAHA.

I wanted to make the fool-proof confirm Husband-approved butter cake, but I couldn't resist not making any changes so I decided to mix around a bit, used my pandan essence to make pandan marble cake. I added a bit of green colouring but it was too little, should have added more. The marbling effect isn't obvious. The pandan taste wasn't overpowering, just a hint of pandan. I think it would be better if the pandan batter was mixed with coconut milk instead of low-fat milk that I used for the main cake batter. But oh wells! Low fat milk is healthier than thick coconut milk!

I used Tish Boyle's butter pound cake recipe, with a few tweaks. The recipe is similar to my mum's butter cake recipe.

Pandan Marble Cake

225g butter, softened
7oz flour
6 oz sugar (cos I only had that!) + 4 tbsp condensed milk
1 tsp baking powder
4 eggs
1/2 cup low fat milk (I didn't measure, but I'm guessing it's about 1/2 cup?)
1 tbsp lemon juice (because I don't have lemon zest)
1 tsp vanilla essence
2 tsp pandan kaya flavour (I used redman brand)
  1.  Preheat oven at 160 degrees Celsius, butter and flour a 10-cup bundt pan.
  2. Cream butter, sugar and condensed milk.
  3. Add in the eggs one at a time, mixing well before adding the next. Add vanilla essence.
  4. Incorporate flour and baking powder into the batter. Add in lemon juice.
  5. Mix in milk, then split the batter into two. Add the pandan flavour and a bit of green colouring. I should have added more colouring but I was scared it will turn out too green to eat. Haha.
  6. Bake for 45 minutes or until the cake tester comes clean when poked through the cake. 
I thought the cake wasn't sweet enough, but maybe I should lower my sweet standards cos too much sugar isn't good anyway. The cake is very moist and rich, love it! Maybe next time I can add a bit more pandan. Husband said that it's good, I was kinda surprised cos he didn't say anything on Sunday itself, only yesterday. He told me to bake another one for the road when we go to Port Dickson this coming weekend. *beams!* I totally love it when he loves what I make. Haha. Have to remember to get eggs and sugar then! :)

Fresh from the oven! The recipe doesn't result in a large cake, which is fine cos I need to cut down on my quantity! Two people shouldn't be eating too much cake.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Apam Balik

I love apam balik. The soft one, with lots of corn. So when @khairulaming posted this on his instagram, I bookmarked it. The recipe is not too much until you get sick of eating apam balik, but I do feel it needs some tweaks to get the pancake king version. But not bad for a first try. 2 cups flour 1/2 cup sugar 1 tsp baking powder 1/2 tsp baking soda 2 tbsp melted butter 1 1/4 cups water 1 egg Additional butter for the pan I do feel it needs some salt, more sugar and I shouldn't have liberally made it so thick HAHA. The pan is important too, I kinda burnt some parts of the pancake. Got them bubbles!! This recipe made 2 large pancakes. Also, the filling needs to be sprinkled with sugar liberally (read: 3 tbsp or so), my first try wasn't enough. Pancake was soft even for the next few days after that (kept in the fridge then reheated in the microwave). Husband found it to be acceptable, but I was kinda not okay with it but ohwells. Rice Cooker Chicken Mushroom Claypot

All in one pot cooking, what's not to love!  Got this off tiktok, but I figured the chicken and mushroom in the recipe isn't enough. Wasn't really one pot cooking cos I cooked half of the chicken on a pan then added it later after the rice cooker was done. Rice Cooker Claypot Chicken marinade: 600g boneless thigh, cut into cubes 6 garlic, pound 2 inch ginger, pound 6 tbsp soy sauce 2 tbsp oyster sauce 4 tbsp sweet soy sauce Rice: Half of the chicken marinade above 2 1/2 cups rice 2 1/2 cups water 3 tbsp sesame oil 2 tbsp soy sauce 1 1/2 chicken cube (maybe 2 also can) 300g shitake mushrooms Coriander leaves, cut Spring onions, cut Marinate the chicken and leave it for about 30 min. Wash the rice. Add half the chicken marinade and all other ingredients into the rice cooker and mix well Cook using rice cooker. I cooked the remaining chicken over the stove and added the chicken, juices and all, into the rice cooker when it was just about done and needed a few minutes to set. M
