Junior, Cake

I am so so sleepy. Junior woke me up at 4 plus this morning and he didn't want to sleep. He only slept back at 6, which was already too late for me to go back to bed!!

Here's some photos from the last few days.

This is my mum's cabinet door that Junior dislodged. Don't ask me how. We're still puzzled. If he were an Avenger, I think he's The Incredible Hulk. 



We had a wonderful family time weekend, just like how weekends are supposed to be like. We could tell Junior was enjoying his weekend too.


This was at John Little Expo. Junior loves to sit at the empty racks cos he can crawl round and be free to move. He didn't want us to carry him away either! And I managed to find work clothes that are cheap (read: $15.90 only!!) and breastfeeding friendly!! The only downside is the dresses are long. Like below the knee long. Reminds me of my very kental days in secondary school where my uniforms were always oversized thanks to dad. Haha.

And this following set was on the day Husband was supposed to fly, just before we left for airport. I wanted to capture my little nephew's photos but look who was up to something in the background!!

We're sleeping over at my mum's, and I gotta admit, nothing beats living in your own home. Even though it may not have the best of furniture and gadgets, or condo-like renovation, or even the fact that you used to live there practically your whole life! I love my home. Maybe Junior misses his bed (and ours too). He slept well the first night, but not so much yesterday.

8 more nights and we'll be reunited and back at our home! Can't wait :) This is the fourth time Husband is away from us :/

Anyway. Back to photos. This was him playing, or rather trying to play, with Cat but Cat obviously bo layan hahahaha. Cat is the resident feline, and she comes almost everyday to sleep at my mum's mini garden, or ask for milk or food. Yup we have cat food now in the larder!


Cat happily ate her dinner and left after she finished, not even looking at Junior. Poor boy. Haha.

Junior is getting more mobile. He crawls round the house, climbs beds, even side cabinets. Little mister curious prefers to be on the floor than in his walker now.

Yesterday was dearest mother's birthday yesterday, and we made walnut butter cake with cream cheese frosting the night before.


It was a hectic day on Wednesday, sending off Husband and flight got delayed, so to cut the story short, our plans to bake were pushed to 10.30pm. I was already so sleepy, but we just did it anyway. We used the usual butter cake recipe, added some ground walnuts and chopped walnuts too, and frosted using the leftover cream cheese icing. By the time we waited for the cake to cool and frosted it, it was over midnight.

Butter Walnut Cake

250g unsalted butter
8 oz flour
1 tsp baking powder
7 oz sugar
150g walnuts, about half ground, half chopped
5 eggs
1 cup milk

Do note that except for butter and eggs duh haha, the rest was estimated measurements cos I added them like a pro-wannabe haha!

The cake wasn't sweet, which was good cos the cream cheese frosting had too much sugar. The cake was soft and moist, and goes really well with the cream cheese! I'm glad the family loves it, even our dad! Yay! Mission accomplished :) It's my first time slicing the cake into 2 (it's not very tall either!) and my first time frosting a cake! Quite ugly and messy. But who cares. It's the taste that matters!

Happy birthday, mak. You have taught me so much, and now that I'm a mother I realise it even more. I love you very much and I wouldn't know what I'd do without you.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Apam Balik

I love apam balik. The soft one, with lots of corn. So when @khairulaming posted this on his instagram, I bookmarked it. The recipe is not too much until you get sick of eating apam balik, but I do feel it needs some tweaks to get the pancake king version. But not bad for a first try. 2 cups flour 1/2 cup sugar 1 tsp baking powder 1/2 tsp baking soda 2 tbsp melted butter 1 1/4 cups water 1 egg Additional butter for the pan I do feel it needs some salt, more sugar and I shouldn't have liberally made it so thick HAHA. The pan is important too, I kinda burnt some parts of the pancake. Got them bubbles!! This recipe made 2 large pancakes. Also, the filling needs to be sprinkled with sugar liberally (read: 3 tbsp or so), my first try wasn't enough. Pancake was soft even for the next few days after that (kept in the fridge then reheated in the microwave). Husband found it to be acceptable, but I was kinda not okay with it but ohwells. Rice Cooker Chicken Mushroom Claypot

All in one pot cooking, what's not to love!  Got this off tiktok, but I figured the chicken and mushroom in the recipe isn't enough. Wasn't really one pot cooking cos I cooked half of the chicken on a pan then added it later after the rice cooker was done. Rice Cooker Claypot Chicken marinade: 600g boneless thigh, cut into cubes 6 garlic, pound 2 inch ginger, pound 6 tbsp soy sauce 2 tbsp oyster sauce 4 tbsp sweet soy sauce Rice: Half of the chicken marinade above 2 1/2 cups rice 2 1/2 cups water 3 tbsp sesame oil 2 tbsp soy sauce 1 1/2 chicken cube (maybe 2 also can) 300g shitake mushrooms Coriander leaves, cut Spring onions, cut Marinate the chicken and leave it for about 30 min. Wash the rice. Add half the chicken marinade and all other ingredients into the rice cooker and mix well Cook using rice cooker. I cooked the remaining chicken over the stove and added the chicken, juices and all, into the rice cooker when it was just about done and needed a few minutes to set. M
