Pengat Pisang

Made pengat pisang today! Was all prepared, with sago no less! And of course, leftover bananas.


My first time attempting this, as usual when my mother does it, I wouldn't pay attention to the method or recipe haha. Anyway when I asked my mum, there wasn't a clear recipe either, all is by estimation.

So here's my version! Makes 1 potful.

Ingredients
4-6 ripe bananas
150ml coconut milk
2 cups water
1 pandan leaf
1 1/2 inches' block of gula melaka
Sugar to taste, if necessary
  1. Heat water with coconut milk until well mixed. Tie the pandan leaf into a knot and put in the pot.
  2. Chop the gula melaka into smaller pieces so that it'll dissolve easily in the mix. Dissolve the gula melaka.
  3. Slice the bananas (not too thin or else they'll break) and put them into the mixture.
  4. Add already boiled and washed sago in! That's it! :)

End product! Couldn't be bothered to take a proper photo cos I was more worried that the santan would pecah if the pengat continued to boil. Haha.


And I still have leftover bananas and sago (didn't know how much to boil) so I made another pot! Yumyum! :)

It was my first time with sago, and I didn't know it'll get so starchy! It took more than 10 minutes of boiling before the white sago turned colourless.

Since it was only me having lunch today, I made self-indulgent food - sardine goreng kari! Muahahaha. Ate with rice and leftover sambal godok which surprisingly didn't go bad even after like three days. Annndddd of course, a bowl of pengat pisang! :) Hungry woman satisfied!!

Sardine goreng kari: Mashed canned sardines, scrambled eggs, with curry powder (about 4 tbsp?), and 1 tbsp chilli sauce. Best eaten with bread or piping hot rice!

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
