I Love My Bridesmaid

I would like to share what my bridesmaid wrote. It is so darn sweet and sappy I just have to share!

Friends for life! ;) Love you loads!!
At the end of the 2 day whirlwind, I didn't think I'd be hearing from the lovebirds until they came back from the honeymoon. I thought they probably wanted to enjoy the first few days of marriage life exclusively together, lost in their own little world. I didn’t even wanna like SMS Far or whatever. So today (Monday) when I got an SMS asking if I was free for dinner, aper lagi! I was shocked, surprised, super duper happy, and onz ah! I can be such an irrational creature but I really do think that it's so sweet of them that they want to spend time with us when it's just Day 2 of being husband and wife! I think the excitement I displayed at meeting up with them was macam lah I didn't see Far for 2 days straight the past days. Haha.

So we had a nice nice dinner, shared stories etc etc. Then, I was even more happy coz we got to invited to see see their house! Haha! Lovely house. So spacious and so much potential. Really, really nice. Just quickly get Masters over and done with, then get the big flat screen DVD, and Wii or Playstation whatever, and I can't wait to be invited over to play games. Haha! Shameless. *grinz*

And finally, the best part was you know what? Not the 2 big boxes of Ferrero Rocher although I think that sure made Herman's day. Nope. The bestest part of all. I is irrational like that, but it was just seeing how happy they were together. Observing the freedom and carefree-ness. And basically the pure happiness just coming out of them. Especially Far. I swear, I'm not exaggerating and I'd much rather shuddup then tell something untrue. She was practically glowing and I thought to myself, and Herman thinks so too, those 2 are so super suited la. And despite (probably) many people's misgivings on them getting married so quickly, looks like it was definitely for the best. If I could can their happiness, there'd be no war in the world and I'd rule the world since I'll be the sole supplier of HAPPY.

So many hugs to Far, many congratulations to the 2 of you, and I'm not going to tell you to quickly come back to office just so I can chat with you. I can survive and you must savour every single moment. Cheers to your future and we’ll catch up with you guys again sometime soon!

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
