Made the fluffiest marble cake ever, with the help of ovalette. Didn't know it's such an amazing leavener! Got the recipe from here , which uses 8 eggs too for the normal use of butter, sugar and flour. The result is a fluffy, not too sweet cake. Marble Cake 250g butter, melted 250g caster sugar 250g flour 1 tbsp ovalette 8 eggs 4 tbsp cocoa powder Vanilla essence Sift flour into a mixing bowl. Add sugar, eggs and ovalette. Using a whisk attachment, mix till incorporated on low, then for about 3 min on medium speed till volume increases. Slowly pour in melted butter with mixer speed on low. Split batter in half for the chocolate version with the cocoa powder. I baked in a 10 inch circle pan for 35 min at 170°C. Out of the oven with minimal cracks! My marbling effect needs improving.
