Date Cake

We were each given 2kg worth of dates that I know will go to waste cos we don't eat dates unless it's made into something else. 

It also looks gross packed like that.

Tried two recipes, one is a date cake and another is an energy bar of sorts. Many said try sticky date pudding but I am lazy to make the toffee sauce. The energy bar was basically dates, oats and nuts packed together and baked and I froze them for quick breakfasts. Not something I'd repeat, but the date cake is worth making over and over!

Original recipe from here, but as usual I don't measure properly.

Date Cake

2 cups pitted dates (original calls for 1 1/2 cups)
1 1/2 cups water
1 tsp baking soda
113g butter, softened
1 tsp vanilla essence
120g sugar (original calls for 150g)
2 large eggs
1 1/2 cup flour
2 tsp baking powder
  1. Boil the pitted dates in water until the dates are mush and forms a thick paste, about 5 minutes. Add baking soda, mix well (it'll bubble!) and set aside.
  2. Cream butter and sugar together, then eggs. Add the flour and baking powder and lastly the dates.
  3. Bake for 40 min in a greased 8 inch baking tin at 170 degrees Celsius.

It was moist, fluffy not so sweet and definitely doesn't feel like eating dates! I added pistachios too since I have those to clear and goes well with dates.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Apam Balik

I love apam balik. The soft one, with lots of corn. So when @khairulaming posted this on his instagram, I bookmarked it. The recipe is not too much until you get sick of eating apam balik, but I do feel it needs some tweaks to get the pancake king version. But not bad for a first try. 2 cups flour 1/2 cup sugar 1 tsp baking powder 1/2 tsp baking soda 2 tbsp melted butter 1 1/4 cups water 1 egg Additional butter for the pan I do feel it needs some salt, more sugar and I shouldn't have liberally made it so thick HAHA. The pan is important too, I kinda burnt some parts of the pancake. Got them bubbles!! This recipe made 2 large pancakes. Also, the filling needs to be sprinkled with sugar liberally (read: 3 tbsp or so), my first try wasn't enough. Pancake was soft even for the next few days after that (kept in the fridge then reheated in the microwave). Husband found it to be acceptable, but I was kinda not okay with it but ohwells. Lontong Goreng Tomyam

When Husband's not around, I become more hardworking HAHAHA. I clean more, I cook more. Saturday I made lontong goreng tomyam for breakfast, and yesterday I made my first ever chicken rice. I even have ingredients to make aglio olio, which I think I'll make either tonight or early tomorrow morning for breakfast. The lontong goreng was a pure experiment, no inferences from recipes and all but it turned out good. Not sure if it's something Husband would eat haha! Lontong Goreng Tomyam 1 packet lontong instant Adabi, cut in cubes 4 tbsp tomyam paste 2 eggs, pre-scrambled Handful of mushrooms Chicken breast, sliced Coriander leaves (I didn't have lemongrass or lime leaves) 1/2-1 tsp salt Fry the tomyam paste in some oil, then add the mushrooms and chicken to cook them.
