Made the fluffiest marble cake ever, with the help of ovalette. Didn't know it's such an amazing leavener! Got the recipe from here, which uses 8 eggs too for the normal use of butter, sugar and flour. The result is a fluffy, not too sweet cake.
250g butter, melted
250g caster sugar
250g flour
1 tbsp ovalette
8 eggs
4 tbsp cocoa powder
Vanilla essence
- Sift flour into a mixing bowl.
- Add sugar, eggs and ovalette. Using a whisk attachment, mix till incorporated on low, then for about 3 min on medium speed till volume increases.
- Slowly pour in melted butter with mixer speed on low.
- Split batter in half for the chocolate version with the cocoa powder.
- I baked in a 10 inch circle pan for 35 min at 170°C.
