Durian Crème Brulee

This is the most decadent dessert EVER. So many egg yolks, so much cream, and then there's Mao Shang Wang durian. It's perfect. So perfect that it will definitely lift your mood, especially with the torching and all.

This was for a special occasion, and I went all out to get the flesh and blowtorch too. Really had fun doing this, and glad that it made many happy. Made two batches but still have some flesh left, might just repeat this again! Tried thinking of other combinations of durian desserts but this seems the best. 

Mao Shang Wang durian flesh at Phoon Huat is not cheap! Or maybe it's not cheap anywhere, but wellsss special occasion so why not :)

6 egg yolks
240g durian puree
70g caster sugar
460g heavy cream
Brown sugar for sprinkling

  1. Mix the egg yolks and durian puree in a big bowl. 
  2. In a saucepan, add sugar and cream. Heat till bubbles form at the side and sugar is all melted. 
  3. Let it cool for 5 to 10 min, then slowly pour into the big bowl and continuously mix with the eggs and durian.
  4. Pour into ramekins, I got 7 using my Daiso ones.
  5. Bake for 20 min at 150°C bain-marie method.
  6. Cool completely, then let it set in the fridge.
  7. Sprinkle brown sugar and torch it just before devouring.

I couldn't wait for it to set in the fridge, so after it has been completely cooled, I went to torch it anyway. OMG SO SEDAP.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
