Putri Salat

Makcik level unlocked y'all! My first successful kuih Melayu kukus. I call this putri salat but some people call it Kuih Seri Muka too. I googled a few recipes and did a few tweaks (orginal from here) so here's what I used. This makes a perfect balance of pulut and custard cos I don't like when the pulut is more than the custard. Like a rip off. Also, I only had 285g of pulut left. HAHA.

Pulut
200ml santan milk
285g pulut/glutinous rice
1/2 tsp salt
1 tsp oil

Soak the glutinous rice with water for about an hour prior to using. Drain the water. I used my IKEA glass bakeware which I don't know the size, probably 8x5 inches? and oiled the whole baking dish. Mix the santan, salt and pulut together and let it soak for a bit. Put pandan knots if available. Steam for 30 minutes. Fluff up the pulut, get the santan all mixed well then flatten the steamed pulut with a greased spatula. Make sure there's no gaps. Steam for another 10 minutes.

Pandan Custard Layer
3 egg yolks + 2 eggs
200ml coconut cream + 50ml coconut milk
7 tbsp flour + 2 tbsp cornstarch
140g sugar
150ml pandan juice

Combine pandan juice (already premade, don't ask me for pandan essence substitute cos I prefer the natural one), coconut milk, flours and sugar. Mix well. Add eggs and whisk. Place pandan mixture on double boiler method and cook till custard starts to thicken like kaya. Make sure you stir continuously. Pour pandan custard onto pulut layer and continue steaming for 30 minutes. Remember to cool completely before cutting!


Happy with the outcome! See the layers! Not too much of pulut!



So so happy when everyone I gave loves this! I should do this more often, and try out other kuih Melayu too since now I'm an expert at steaming hahaha.

I also tried steaming bread pudding using my usual recipe, and it turns out way nicer than baking. Faster too!

Daiso Ramekins

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone.
