Flourless Fudge Cookies

Came across this recipe in my Instagram feed and it's perfect for using up egg whites. I end up with 3 egg whites after making pineapple or nutella tarts, and this recipe calls for exactly that! Bookmarked it, and since I did nutella tarts last Friday, I decided to make this even though there's so many sweet treats I've made these past few days of circuit breaker.

Flourless Fudge Cookies

3 egg whites (105g)
1/4 tsp salt
1 tsp vanilla essence

225 confectioners' sugar (I didn't have enough so I topped up with caster sugar + 1 tsp cornflour)
85g Dutch processed cocoa

2 cups of nuts/chocolate chips

Mix the wet ingredients together. Put the dry ingredients in the processor and blend to get them into fine powder (because I'm lazy to sieve). Add the wet ingredients and mix well.

Line baking tin with baking paper. Scoop 1 tbspful and spread onto the baking paper, it won't spread much so can put more. Cookies of 2 inches in diameter bakes at 8 minutes at 180 degrees Celsius.


Chewy like brownies and so very chocolatey! YUMZ.

Back from the long weekend! Spent two days fully at home, cooking and baking. So happy. Day 1 was sindhi briyani and Almond London . Day 2 was ayam lemak cili padi and a batch of almost Famous Amos chocolate chip cookies , but I split the batter into 2: hazelnut, white chocolate, cranberry combination and hazelnut, dark chocolate chip combination. I made the cranberry ones first, they taste awesome. But after I ate the chocolate chip one, say bye bye to cranberry! Nothing beats chocolate. And the white chocolate chips somehow dissolved into the batter, melted. What to do, it's just white chips from Redman. I should try a better brand instead.  Happy new year indeed!

White Chocolate Cranberry Oatmeal Bars

 I love these! It's like a blondie but to make me feel less guilty, there's oatmeal. Was supposed to make these and freeze for easy morning breakfasts, but seems like they ran out pretty quickly that it didn't require that much freezing. Original recipe here . I made these almost three months ago and I still think about making these again and again. White Chocolate Cranberry Oatmeal Bars 2 1/2 cups old fashioned oats 2 cups flour 1 1/2 cups brown sugar 1 teaspoon baking soda 1 teaspoon salt 1 tablespoon vanilla 2 large eggs 1 1/4 cups butter melted 1 cups white chocolate chips 1 cup dried cranberries This is like one bowl mix so anything goes. Spread batter in two 8x8 square tins, bake for 22 min at 180 degrees Celsius. 

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Maybe when I was making lava cake . Daiso is evil. It's so cheap you just feel like coming back again! Oh and did I mention there's a $2 weighing scale?! Measures up to a kilo but that's quite alright for baking isn't it! I mean, $2!! Dirt cheap lah. Not sure about the accuracy though.
