Nagasari Jagung

Soooo. My last post was exactly a year ago! I have been meaning to update with recipes mostly, but that too I did not make time for, so finalehhh I am writing. I'll post recipes first, cos I'm lazy to upload pictures.

Nagasari Jagung

Original recipe: http://narny.blogspot.sg/2010/08/nagasari-jagung.html

450ml water
175g sugar
1 pandan leaf

Boil the above until the sugar dissolves.

1 packet Hoon Kueh flour (120g)
200 ml water

In another pot, mix flour bit by bit in the water and gently simmer. I used a whisk. My first time making this, I had a hard time removing the lumps cos I added the flour all at once! Add the sugar water.

250ml thick coconut cream (the Kara brand, I didn't try coconut milk thinking it'll be diluted)
1/2 tsp salt
1 box corn kernel (Del Monte, wash away the water)

Add the coconut and salt into the simmering mixture and whisk until it reaches boiling point (5 minutes). Finally add the corn and stir for another 1 min. Spoon 2 tbsp of mixture onto banana leaf or plastic and wrap. Chill in fridge.

I have yet to find the proper plastic to wrap this. If you know where to buy, please tell me! Baking shops only gave me cellophane plastic, which is not sturdy.\

I've made this a few times, practice makes perfect!

CNY Bakes

Back from the long weekend! Spent two days fully at home, cooking and baking. So happy. Day 1 was sindhi briyani and Almond London . Day 2 was ayam lemak cili padi and a batch of almost Famous Amos chocolate chip cookies , but I split the batter into 2: hazelnut, white chocolate, cranberry combination and hazelnut, dark chocolate chip combination. I made the cranberry ones first, they taste awesome. But after I ate the chocolate chip one, say bye bye to cranberry! Nothing beats chocolate. And the white chocolate chips somehow dissolved into the batter, melted. What to do, it's just white chips from Redman. I should try a better brand instead.  Happy new year indeed!

White Chocolate Cranberry Oatmeal Bars

I love these! It's like a blondie but to make me feel less guilty, there's oatmeal. Was supposed to make these and freeze for easy morning breakfasts, but seems like they ran out pretty quickly that it didn't require that much freezing. Original recipe here . I made these almost three months ago and I still think about making these again and again. White Chocolate Cranberry Oatmeal Bars 2 1/2 cups old fashioned oats 2 cups flour 1 1/2 cups brown sugar 1 teaspoon baking soda 1 teaspoon salt 1 tablespoon vanilla 2 large eggs 1 1/4 cups butter melted 1 cups white chocolate chips 1 cup dried cranberries This is like one bowl mix so anything goes. Spread batter in two 8x8 square tins, bake for 22 min at 180 degrees Celsius.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Maybe when I was making lava cake . Daiso is evil. It's so cheap you just feel like coming back again! Oh and did I mention there's a $2 weighing scale?! Measures up to a kilo but that's quite alright for baking isn't it! I mean, $2!! Dirt cheap lah. Not sure about the accuracy though. Didn't do much cleaning last weekend, very much spent lazing around at home just like what weekends should be like. I love being at ho
