Clear The Fridge Aglio Olio

The little one woke me up just after 4 for milk, and at that time I didn't feel sleepy at all so I played games on the phone and got up at 5 to make today's breakfast and lunch. It was clear-the-fridge aglio olio!

Sadly some of the mushrooms have gone bad, but I managed to salvage some. I also have cauliflower, capsicum and fried chicken to clear.

For a portion of 2, the following ingredients were used:

4 cloves garlic, minced
3 cili padi, sliced
1/2 capsicum, sliced
Whatever mushrooms I had
1/2 floret of cauliflower
2 handfuls of shell pasta (HA HA lazy me used hands as unit of measure)
2 cooked chicken breast, sliced
Extra virgin olive oil for dressing

  1. In the interest of time, I boiled the cauliflower in the same water as the pasta. Cauliflower was cooked first, taken out then pasta goes into the boiling water added with salt and oil.
  2. I also pre-fried the capsicum in a little oil, mainly cos I fried the whole capsicum and set aside half for another day.
  3. In that same frying pan, add the minced garlic and cili padi in oil, stir a bit and add in the mushrooms and cook for a couple of minutes. 
  4. Add the capsicum, chicken and cauliflower in. Add 1/2 tsp salt.
  5. Once mixed and cooked, turn off the fire. I removed the cili padi as well, since I don't eat cili padis like that.
  6. Add in the drained pasta and drizzle with EVOO.
This round's attempt at aglio olio turned out better and more flavourful, with better kick too since it's 3 cili padis.


While I like the idea of this lazy yet versatile pasta for easy meals, I don't like the cleaning up i.e. 1 big pot + frying pan + strainer basket. One day I shall try those one pot pasta meals. That cuts out the use of frying pan and strainer.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
