Tomyum Creamy Pasta

Last Friday I was craving some tomyum creamy pasta from Pastamania. I thought I'd have that for my me time lunch. But. I got turned off at the queue with lots of students. Urgh. How much pocket money do these kids get?!

So I went NTUC instead and got ingredients for Sunday's experiment meal.

I couldn't find much tomyum pastes, which I thought was weird, so I settled for NTUC brand paste. Didn't get any seafood either cos I don't fancy seafood that much. The darling daughter had 3 hours nap, which left me with much time to iron clothes, sweep the floor, cook the pasta sauce and marinate chicken breasts to be eaten with the pasta (I didn't put meat into the sauce).

I cooked for dinner for myself and Husband, with agarations as usual since there's no recipe per se.

Cooking the veges first


Tomyum Creamy Pasta

1 onion, sliced
2 lemongrass, bruised
3 tbsp NTUC tomyum paste (2 for less spicy)
100ml cooking cream
100ml milk
(no need salt!)

  1. Heat a pot and coat lightly with oil. 
  2. Fry the lemongrass until fragrant, then add in onions and fry until fragrant.
  3. Add in the vegetables to cook through. I used leftover stuff like broccoli, baby corn, and I added mushrooms and tomatoes. 
  4. Add a little water and close with lid to steam cook stuff like broccoli and baby corn.
  5. Add in the tomyum paste and cook off the water added earlier.
  6. Once all veges are cooked, add the cream and milk and mix well until incorporated.
  7. Serve with pasta and chicken.
I still have some tomyum paste left, can do more in the future! Maybe can use less cream more milk. Husband said it's good. Yay! That's big for someone who usually cannot appreciate my experiments hahaha.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Apam Balik

I love apam balik. The soft one, with lots of corn. So when @khairulaming posted this on his instagram, I bookmarked it. The recipe is not too much until you get sick of eating apam balik, but I do feel it needs some tweaks to get the pancake king version. But not bad for a first try. 2 cups flour 1/2 cup sugar 1 tsp baking powder 1/2 tsp baking soda 2 tbsp melted butter 1 1/4 cups water 1 egg Additional butter for the pan I do feel it needs some salt, more sugar and I shouldn't have liberally made it so thick HAHA. The pan is important too, I kinda burnt some parts of the pancake. Got them bubbles!! This recipe made 2 large pancakes. Also, the filling needs to be sprinkled with sugar liberally (read: 3 tbsp or so), my first try wasn't enough. Pancake was soft even for the next few days after that (kept in the fridge then reheated in the microwave). Husband found it to be acceptable, but I was kinda not okay with it but ohwells. Lontong Goreng Tomyam

When Husband's not around, I become more hardworking HAHAHA. I clean more, I cook more. Saturday I made lontong goreng tomyam for breakfast, and yesterday I made my first ever chicken rice. I even have ingredients to make aglio olio, which I think I'll make either tonight or early tomorrow morning for breakfast. The lontong goreng was a pure experiment, no inferences from recipes and all but it turned out good. Not sure if it's something Husband would eat haha! Lontong Goreng Tomyam 1 packet lontong instant Adabi, cut in cubes 4 tbsp tomyam paste 2 eggs, pre-scrambled Handful of mushrooms Chicken breast, sliced Coriander leaves (I didn't have lemongrass or lime leaves) 1/2-1 tsp salt Fry the tomyam paste in some oil, then add the mushrooms and chicken to cook them.
