Dates Brownies

Ramadan is here, which means lots of dates, and time to think of ways to keep my supply up.

I looked for a dates brownie recipe and came across this recipe from Annabel Langbein which uses a whole lot of dates and is the ultimate chocolate brownie. I halved the recipe cos it's just too much, and pitting and chopping a cup of dates is rather time consuming.


Ultimate Chocolate Brownies

1 cup pitted and chopped dates
1/2 tsp baking soda
3/8 cup boiling water
150ml oil
2 eggs
1 cup sugar (can reduce)
1/2 cup cocoa
1/2 cup flour
1/4 tsp baking powder

  1. Soak the chopped dates in the baking soda and boiling water, then add oil and mix all together. Mash them to get a creamy consistency. I didn't fully mash them, there were still some chunks of dates in the brownies but can't really tell. Let it rest for about 20 minutes or until the mixture is no longer hot.
  2. In a large separate bowl, add sugar, then sift in the flour, baking powder and cocoa. I used Valrhona dutch processed cocoa powder for a very chocolaty flavour.
  3. Add the eggs into the dates mixture and mix well.
  4. Add the dates mixture into the dry ingredients and mix well.
  5. Add in chocolate chips and/or nuts. I added in loads of flaxseeds just to clear my stock. Haha.
  6. Bake in an 8x8 inch lined pan for 37 minutes at 170 degrees Celsius or until just done, not too long!
I'm glad the paper can be very easily removed from the brownies, and it's a very rich cake! Very chocolaty and sweet. This recipe is a keeper cos it uses lots of dates, an easy way to use up dates. I think the sugar can be reduced to 1/2 cup though since dates are already sweet.

Maybe I'll make another batch to use up other dates.

Daiso Ramekins

Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
