Butter Cake with Cream Cheese Filling

Being at my mum's for the weekend, naturally I'll have loads of free time haha. No housework of my own to do.

Since my sister and husband were coming, I decided to bake something to share the fats around.

I had cream cheese and butter to use, and this was one of the recent crazes among baking bloggers, the butter chocolate cheese cake.

But my sister didn't want a chocolate version hence, just butter cake with cream cheese filling or centre.

I adapted the recipe from here, didn't add in milk because the eggs I used were already big and the batter is quite liquid.

Butter Cream Cheese Cake

225g butter, softened
6 oz caster sugar
8 oz flour, sifted
1 1/2 tsp baking powder
4 eggs


250g cream cheese
4 tbsp sugar
1 tbsp flour
1 egg

Cream the butter and sugar together. Add in egg one at a time and mix well. Add in the flour and baking powder and that's your cake batter.
Cream the cream cheese with the sugar, then egg and flour. I didn't use an electric mixer so I had some small lumps but that's okay.
Add half the batter to a 9 inch pan (I think should use 8 inch cos I couldn't get enough batter to cover the cream cheese at the side of the pan) and spread it smoothly, then add the cream cheese layer and spread it all round. Add the cake batter layer last. I sprinkled some chocolate chips in the cheese layer, and almonds on the top.

My baby boy helped mix the cake batter and put in the chocolate chips :) I love baking with him :)

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
