Cod Potato Cakes

I love clearing out the ingredients in my kitchen. Feels good to see the fridge getting emptier without having to throw things away.

I made cod potato cakes, or what I'd call fish begedil, early yesterday morning! Complete with breadcrumbs :) They were really yummy, but a bit too soft that some sorta broke while frying. Maybe if I let them cool in the fridge it would have been better. Or I could use fried potatoes instead of boiled like we do in begedil.

Cod Potato Cakes (makes 12)

1 cod fillet, about 160g
4 small to medium potatoes
Milk (as usual I didn't measure)
Water (same here!)
2 bay leaves
1 lime
Salt & pepper
1 piece of already or almost expired bread, blitzed

  1. Skin and cut potatoes into cubes, boil them in water till soft.
  2. While potato is cooking, heat up equal parts water and milk in another pan for the fish. Add in the 2 bay leaves and cook the fish till tender.
  3. Strain the potatoes, then mash them. Season well with salt and pepper. I added a dash of milk to make it mash potato-ey. It tastes good but not good to roll into balls hurhur.
  4. Flake the fish and add to the potatoes, mix well.
  5. Juice the lime and add to the mix.
  6. Coat with the breadcrumbs and fry!
Really good. Maybe I can feed my little girl the same version without the breadcrumbs and frying.

Husband likes it, but as usual he can't eat these on their own too much. Tekak melayu you know. Haha. I have another cod fillet and potatoes to use up, gonna make another batch tomorrow morning!

CNY Bakes

Back from the long weekend! Spent two days fully at home, cooking and baking. So happy. Day 1 was sindhi briyani and Almond London . Day 2 was ayam lemak cili padi and a batch of almost Famous Amos chocolate chip cookies , but I split the batter into 2: hazelnut, white chocolate, cranberry combination and hazelnut, dark chocolate chip combination. I made the cranberry ones first, they taste awesome. But after I ate the chocolate chip one, say bye bye to cranberry! Nothing beats chocolate. And the white chocolate chips somehow dissolved into the batter, melted. What to do, it's just white chips from Redman. I should try a better brand instead.  Happy new year indeed!

White Chocolate Cranberry Oatmeal Bars

 I love these! It's like a blondie but to make me feel less guilty, there's oatmeal. Was supposed to make these and freeze for easy morning breakfasts, but seems like they ran out pretty quickly that it didn't require that much freezing. Original recipe here . I made these almost three months ago and I still think about making these again and again. White Chocolate Cranberry Oatmeal Bars 2 1/2 cups old fashioned oats 2 cups flour 1 1/2 cups brown sugar 1 teaspoon baking soda 1 teaspoon salt 1 tablespoon vanilla 2 large eggs 1 1/4 cups butter melted 1 cups white chocolate chips 1 cup dried cranberries This is like one bowl mix so anything goes. Spread batter in two 8x8 square tins, bake for 22 min at 180 degrees Celsius. 

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Maybe when I was making lava cake . Daiso is evil. It's so cheap you just feel like coming back again! Oh and did I mention there's a $2 weighing scale?! Measures up to a kilo but that's quite alright for baking isn't it! I mean, $2!! Dirt cheap lah. Not sure about the accuracy though.
