Speculoos Cheesecake

So I finally did something with the speculoos spread.

Made it into a cheesecake with the biscoff biscuits as the base! As usual I engaged my little boy for some help. I let him beat up the biscuits in the ziploc bag and he loved it so much! He said he was very excited hahaha.

This recipe was a campak2 recipe, I based on a few websites I saw, and pretty much used whatever I had in the fridge.

Speculoos Cheesecake

30 biscoff biscuits, crushed
25g melted butter

2x 8oz cream cheese
3 eggs
1/4 cup yoghurt
1/4 cup thickened cream
300g speculoos spread
150g sugar

Add melted butter to crushed biscoff biscuits, then transfer to an 8 inch springform pan and flatten to make the crust.

Use a mixer to mix the rest of the ingredients together, then pour into the pan and bake for about 50-55 minutes at 170 degrees Celsius. I was supposed to use a water bath method but my oven can't fit the 9x13 inch roasting pan hurhur.

It turned out fine, with some cracks near the sides, nothing a bit of cream can't cover up! I wanted to pipe speculoos whipped cream on top, but as usual I spoiled the cream, sorta curdled or maybe it didn't I don't know. I still have not mastered stiffening whipped cream grr.

Served to my family and my brother said it tasted like creme brulee cheesecake, my mum said it looked like kuih bakar and my dad said it tasted like some brown kuih melayu (my knowledge of kuih melayu is very limited). Must be the caramelised taste.

The cake turned out well, but it's not something I would do again because I love speculoos just as it is, in a cheesecake, not so.

Yesterday I made half a batch of Banana Walnut Muffins because I had 2 overripe bananas and yoghurt to finish. This is my go-to recipe for banana cakes now, since Husband totally approves of it :)

Next I have some apples and blueberries to be made into yummy goodies! I wonder if I can salvage the speculoos whipped cream and make some speculoos apple muffins.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
