Pineapple Tarts with My Sweetheart

This morning I woke up earlier to get ready and even have breakfast before sending Junior to my mum's via bus. TWO buses sadly. Same town, but at different ends. Our car is spoilt and Husband followed the tow truck to send it to the workshop. I must say, getting up early and forcing yourself to have breakfast is really good discipline. Junior was still sleeping when I was all ready so I had to wake him up. But since he loves the idea of taking buses (he's been asking for it for countless of times), he got up all fresh and ready to go. After sending him off, time for me to take another two buses to work. All in all the journey took about 1 hr 45 min which is not too bad, I reached work around 8.45am. Fatty me was panting by the time I got to office haha!

Spent the entire afternoon in the kitchen yesterday, making pineapple tarts and daging masak merah. Junior helped too! He helped pound the garlic and ginger, then later with rolling of the dough. He loves helping out in the kitchen haha. I actually don't really have a craving for pineapple tarts, but last Thursday I ate a piece and I kinda missed eating it so why not make some. I was actually craving for chwee kueh but where to get halal ones! And to make your own is quite painstaking because you need four types of flours. So many!! So I ditched that.

CNY Bakes

Back from the long weekend! Spent two days fully at home, cooking and baking. So happy. Day 1 was sindhi briyani and Almond London . Day 2 was ayam lemak cili padi and a batch of almost Famous Amos chocolate chip cookies , but I split the batter into 2: hazelnut, white chocolate, cranberry combination and hazelnut, dark chocolate chip combination. I made the cranberry ones first, they taste awesome. But after I ate the chocolate chip one, say bye bye to cranberry! Nothing beats chocolate. And the white chocolate chips somehow dissolved into the batter, melted. What to do, it's just white chips from Redman. I should try a better brand instead.  Happy new year indeed!

White Chocolate Cranberry Oatmeal Bars

 I love these! It's like a blondie but to make me feel less guilty, there's oatmeal. Was supposed to make these and freeze for easy morning breakfasts, but seems like they ran out pretty quickly that it didn't require that much freezing. Original recipe here . I made these almost three months ago and I still think about making these again and again. White Chocolate Cranberry Oatmeal Bars 2 1/2 cups old fashioned oats 2 cups flour 1 1/2 cups brown sugar 1 teaspoon baking soda 1 teaspoon salt 1 tablespoon vanilla 2 large eggs 1 1/4 cups butter melted 1 cups white chocolate chips 1 cup dried cranberries This is like one bowl mix so anything goes. Spread batter in two 8x8 square tins, bake for 22 min at 180 degrees Celsius. 

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Maybe when I was making lava cake . Daiso is evil. It's so cheap you just feel like coming back again! Oh and did I mention there's a $2 weighing scale?! Measures up to a kilo but that's quite alright for baking isn't it! I mean, $2!! Dirt cheap lah. Not sure about the accuracy though. Didn't do much cleaning last weekend, very much spent lazing around at home just like what weekends should be like. I love being at ho
