Malay Chicken Curry

I'll steal in a quick blog post this morning. Last Saturday I tried out the Malay chicken curry recipe to the T from Malay Heritage Cooking by Rita Zahara. Not my type of curry, sadly. Too much coconut milk! It would have been much better omitting the coconut milk totally, or replacing with yoghurt. I'm an Indian curry lover, not Malay. Haha.

Husband started his 6 week class on Saturday mornings and that leaves me plenty of time to do my own things. But for the past two weeks instead of stealing in a quick bake, I decided to cook! Feels good to cook for The Husband especially when he comes home all hungry and tired :) The weekend before I made sweet and sour fish, no recipe just throw in stuff. This Saturday I plan to make laksa! Heehee.

I also managed to clean the house, do laundry and go to the market before cooking. It's amazing how much you can do in a few hours.

No pictures of cooked food because I didn't bother taking any, but here's photos of Junior carrying my trolley for me to the market!



To the market we go! He insisted to pull the trolley but he stopped after I bought chicken haha. Too heavy I guess :D

CNY Bakes

Back from the long weekend! Spent two days fully at home, cooking and baking. So happy. Day 1 was sindhi briyani and Almond London . Day 2 was ayam lemak cili padi and a batch of almost Famous Amos chocolate chip cookies , but I split the batter into 2: hazelnut, white chocolate, cranberry combination and hazelnut, dark chocolate chip combination. I made the cranberry ones first, they taste awesome. But after I ate the chocolate chip one, say bye bye to cranberry! Nothing beats chocolate. And the white chocolate chips somehow dissolved into the batter, melted. What to do, it's just white chips from Redman. I should try a better brand instead.  Happy new year indeed!

White Chocolate Cranberry Oatmeal Bars

 I love these! It's like a blondie but to make me feel less guilty, there's oatmeal. Was supposed to make these and freeze for easy morning breakfasts, but seems like they ran out pretty quickly that it didn't require that much freezing. Original recipe here . I made these almost three months ago and I still think about making these again and again. White Chocolate Cranberry Oatmeal Bars 2 1/2 cups old fashioned oats 2 cups flour 1 1/2 cups brown sugar 1 teaspoon baking soda 1 teaspoon salt 1 tablespoon vanilla 2 large eggs 1 1/4 cups butter melted 1 cups white chocolate chips 1 cup dried cranberries This is like one bowl mix so anything goes. Spread batter in two 8x8 square tins, bake for 22 min at 180 degrees Celsius. 

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Maybe when I was making lava cake . Daiso is evil. It's so cheap you just feel like coming back again! Oh and did I mention there's a $2 weighing scale?! Measures up to a kilo but that's quite alright for baking isn't it! I mean, $2!! Dirt cheap lah. Not sure about the accuracy though. Didn't do much cleaning last weekend, very much spent lazing around at home just like what weekends should be like. I love being at ho
