Rocky Road Brownies (Best Cocoa Brownies)

Another batch of rocky road, yes! And even so, I didn't finish my pack of marshmallows and hazelnuts. Sigh. But I did finish my chocolates!


Haha I didn't use all of that, I threw away Nips and kept 1 bar of Toblerone back in the fridge hehe.

This time round, I didn't use as much too, the first time was overkill. Haha.

I used a different recipe for the brownie too, a recipe I've been meaning to use for a long time, best cocoa brownies by smitten kitchen. And it's a wonderful recipe! Best brownie I've made from scratch. Totally love the rich, fudgy deep chocolate flavour. I love that this brownie can be made in a saucepan too! Fuss free and easy.

10 tablespoons (140 grams) unsalted butter
1 1/4 cups (250 grams) sugar
3/4 cup plus 2 tablespoons (65 grams, though some brands may weigh more) unsweetened cocoa powder (natural or Dutch-process)
2 large eggs, cold
1/2 cup (65 grams) all-purpose flour
  1. Melt butter in a saucepan, add in sugar and cocoa and mix well with a whisk. Take the saucepan off the heat once all are incorporated.
  2. Once the mixture is cooled, mix in eggs one at a time.
  3. Add in flour and mix well.
  4. Split batter into 2 round 7 inch pans (or 1 8 inch square pan), bake at 160 degrees Celsius for about 20-25 minutes.

 The marshmallows turned out perfect! Not all melted, crispy on top and warm and stretchy inside. Yums. I've perfected rocky road brownies muahahaha.

CNY Bakes

Back from the long weekend! Spent two days fully at home, cooking and baking. So happy. Day 1 was sindhi briyani and Almond London . Day 2 was ayam lemak cili padi and a batch of almost Famous Amos chocolate chip cookies , but I split the batter into 2: hazelnut, white chocolate, cranberry combination and hazelnut, dark chocolate chip combination. I made the cranberry ones first, they taste awesome. But after I ate the chocolate chip one, say bye bye to cranberry! Nothing beats chocolate. And the white chocolate chips somehow dissolved into the batter, melted. What to do, it's just white chips from Redman. I should try a better brand instead.  Happy new year indeed!

White Chocolate Cranberry Oatmeal Bars

 I love these! It's like a blondie but to make me feel less guilty, there's oatmeal. Was supposed to make these and freeze for easy morning breakfasts, but seems like they ran out pretty quickly that it didn't require that much freezing. Original recipe here . I made these almost three months ago and I still think about making these again and again. White Chocolate Cranberry Oatmeal Bars 2 1/2 cups old fashioned oats 2 cups flour 1 1/2 cups brown sugar 1 teaspoon baking soda 1 teaspoon salt 1 tablespoon vanilla 2 large eggs 1 1/4 cups butter melted 1 cups white chocolate chips 1 cup dried cranberries This is like one bowl mix so anything goes. Spread batter in two 8x8 square tins, bake for 22 min at 180 degrees Celsius. 

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Maybe when I was making lava cake . Daiso is evil. It's so cheap you just feel like coming back again! Oh and did I mention there's a $2 weighing scale?! Measures up to a kilo but that's quite alright for baking isn't it! I mean, $2!! Dirt cheap lah. Not sure about the accuracy though.
