Family Weekend

While waiting for Husband to end his meeting, I shall blog.

We're going Toys R Us later to look at, well, toys. HAHA.

Feeling under the weather a little, my throat felt weird yesterday afternoon and when it was night time I felt like I was swallowing a golf ball. Very painful. Now it's much better, with slight fever, am thinking if I should go to the doctor or not. And the office is freezing cold!! These people aren't wearing any jackets or anything either!

It's already midweek but I'm gonna blog about the weekend haha. Made butter almond cake for dearest Husband who has been complaining I have been baking everything under the sun except his favourite, and on Sunday we had family day by the work place! It was fun :) Games, mingling with staff, and Junior had his first sea play. Haha. He wasn't quite fond of walking on sand but he really loved to be in the sea with his daddy. Thank goodness the weather was alright, not too hot and no thunderstorm. It did drizzle a little but that's okay. We're gonna get for him sandcastle toys and bring him to the beach more often. Which means I have to go get sunblock too.

The butter almond cake! I used a higher almond-flour ratio than my previous attempt and was kinda regretting it when I ate-clean the batter off the bowl (best part of baking!) cos it wasn't sweetl, but Husband didn't notice anything hurhur!!

Butter Almond Cake

250g salted butter
250g sugar
100g ground almonds
150g flour, sifted
4 eggs
1 cup milk
1 1/2 tsp baking powder
  1. Cream the butter and sugar with a wooden ladle.
  2. Add in the eggs, one at a time and mixing them well.
  3. Add in flour and ground almonds, then mixing in the milk.
  4. Bake for 40 minutes at 170 degrees Celsius. I did mine in a bundt pan.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
