Apple Cupcakes/Minicakes

Apple cupcake/mini cakes in the oven wee!! Finally FINALLY got to use all the apples. I loosely adapted the recipe from here, with alterations. I made 1 1/2 times the batter so that I could use all 6 apples. Am not sure what they will turn out like, but here's the recipe anyway! I'll update in a few minutes' time when the 1st batch is out.

Moist Apple Cake
6 apples, diced
1 1/2 tbsp cinnamon
4 1/2 tbsp sugar
2 1/2 cups flour
1 tbsp baking powder
1/2 cup canola oil + 2 tbsp butter
1 1/2 cups sugar
1/3 cup apple juice
2 tsp vanilla
3 eggs
1/2 cup milk

  1. Mix the diced apples, cinnamon, 4 1/2 tbsp sugar together, make sure the apples are coated well.
  2. Mix the butter, oil, apple juice, sugar, vanilla together well. Add in eggs one at a time, incorporating into the batter.
  3. Add in the flour and baking powder.
  4. Because I thought the batter was too thick, I added the milk here haha.
  5. Add in the apples and walnuts and mix well.
  6. Bake at 180 degrees Celsius for about 25 minutes for cupcakes and 30 minutes for mini cakes.

Okay they are out of the oven and I ate 2 cupcakes already! Okay lah not bad. Definitely moist. And are they too sweet? Seems like it or maybe it's because of my sore throat haha. Should have added more walnuts though! 

Okay I think I have another 1 or 2 batches more to bake, so while waiting maybe I shall either vacuum or start preparing my lunch. Still don't know what to eat though.

Bubur Asyura

Finally made this! Have been wanting to do so cos this porridge has loads of nuts. Not exactly a healthy porridge though since there's coconut milk. Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Maybe when I was making lava cake . Daiso is evil. It's so cheap you just feel like coming back again! Oh and did I mention there's a $2 weighing scale?! Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
