Nigella's Everyday Brownies

New addition to the work table! Parfum!


Using bamboo scent we bought from Taka, I can't remember the brand. The Husband was compelled to buy from this auntie cos she gives good customer service. She can even guess what kind of scents we like, and she's almost correct all the time! This was a bit pricey, 60 bucks per bottle, and we bought the refill as well, $40. An impulse buy for me, cos it was The Husband who wanted it and on the spot I took one as well haha.

But now my nose is half-stuck. Bleah.

Made brownies last Friday. Was on childcare leave, my poor baby was having fever. I managed to cook too haha. Made nasi goreng for myself with leftovers on Friday, and spaghetti goreng yesterday! I is amazed with what I can do when I have no menu restrictions.

So for the brownies. It was the first time I made brownies from scratch! Yes! I've been too reliant on brownie mixes haha. This time I tried a safe bet, Nigella's everyday brownies. It didn't need any melting of chocolate, a fuss free recipe.


Best part of baking: eating the leftover batter yumyum!

Here's what I used:

1 1/2 sticks unsalted butter
1 1/2 cups sugar
1 cup dutch processed cocoa
1 cup all-purpose flour
1 teaspoon baking soda
4 eggs
1 teaspoon vanilla
1 cup chocolate chips & 9 fererro rocher crushed
  1. Melt the butter, add the sugar flour, baking soda and cocoa and mix. The mixture was REALLY thick. Best to use a wooden ladle but nooo I had to use the whisk and it got stuck. Haha.
  2. Mix in the eggs until fully incorporated.
  3. Transfer to a parchment lined 9 by 9 inch pan, bake for 25 minutes.

Very the chocolatey. Yummy! But I should've baked a bit shorter, it's like a fudge cake now. Haha. Will try this again! It's a good brownie base recipe.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
