Epok-Epok

I made curry puffs last Saturday. Wasn't much of a success, Husband didn't gobble them up and now I am eating the final one. Haha.

In my opinion though I think it's a decent start. It's my first time making them on my own. The filling was good, but the dough sadly I forgot to add salt and I could have made the dough thinner. I always forget the salt. Or even if I do remember, it's so scant that Husband thinks I didn't put any at all. I'm not a big fan of salt anyway haha.

The curry puff was filled with boiled potatoes, minced meat and quarter of a boiled egg.

Below is the recipe for the filling:

6 medium potatoes, boiled, peeled & diced
5 boiled eggs, cut into fours
400g minced meat (I like lotsa meat in my curry puffs)
1 tsp salt (too little I guess?)
2 medium onions, sliced
1 tsp ground black pepper
1 1/2 tsp chili powder
6-8 tbsp curry powder? I didn't measure
About 15 curry leaves

I had some filling leftover, but I guess if I rolled the dough a bit more thinner I would have finished using the filling. All in all I got 18 curry puffs.

I asked my mum for the dough recipe and to my horror she said there's none. Gasp. Agak-agak only. Oh help. She said just use flour, warm water and warm oil and salt. Add warm water to the flour but not until so soft then add the oil. I'm like, how I know when it's soft?! So all in all I tried and I used about 400g of flour, 1 cup of warm water and few tbsp of oil. And no salt remember? HAHA. I should have rolled the dough thinner so that it'll be more crispy, but this does taste like my mommy's curry puff. Yay! But if you see the hideous picture above haha, I clearly don't know how to pintal the rounded edges I anyhow whack! Haha! I sent the picture to my mum and she said not bad lah for a first time. She suspected that the dough was too soft hence the lack of shape. Oh wells. I can try again next time!

CNY Bakes

Back from the long weekend! Spent two days fully at home, cooking and baking. So happy. Day 1 was sindhi briyani and Almond London . Day 2 was ayam lemak cili padi and a batch of almost Famous Amos chocolate chip cookies , but I split the batter into 2: hazelnut, white chocolate, cranberry combination and hazelnut, dark chocolate chip combination. I made the cranberry ones first, they taste awesome. But after I ate the chocolate chip one, say bye bye to cranberry! Nothing beats chocolate. And the white chocolate chips somehow dissolved into the batter, melted. What to do, it's just white chips from Redman. I should try a better brand instead.  Happy new year indeed!

White Chocolate Cranberry Oatmeal Bars

I love these! It's like a blondie but to make me feel less guilty, there's oatmeal. Was supposed to make these and freeze for easy morning breakfasts, but seems like they ran out pretty quickly that it didn't require that much freezing. Original recipe here . I made these almost three months ago and I still think about making these again and again. White Chocolate Cranberry Oatmeal Bars 2 1/2 cups old fashioned oats 2 cups flour 1 1/2 cups brown sugar 1 teaspoon baking soda 1 teaspoon salt 1 tablespoon vanilla 2 large eggs 1 1/4 cups butter melted 1 cups white chocolate chips 1 cup dried cranberries This is like one bowl mix so anything goes. Spread batter in two 8x8 square tins, bake for 22 min at 180 degrees Celsius.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Maybe when I was making lava cake . Daiso is evil. It's so cheap you just feel like coming back again! Oh and did I mention there's a $2 weighing scale?! Measures up to a kilo but that's quite alright for baking isn't it! I mean, $2!! Dirt cheap lah. Not sure about the accuracy though. Didn't do much cleaning last weekend, very much spent lazing around at home just like what weekends should be like. I love being at ho
