4 of 29

Day 4 of 29. I hope I can complete all 29! Shouldn't have procrastinated. Urgh. I have to fast like every weekday hopefully I can make it. And I hope it won't affect my supply too much.

I think this fasting thing is making me more of a baking monster. Not being able to eat amplifies my need to look at these yummy cakes and frosting. Speaking of which, I wonder how my extra cream cheese frosting is doing in my freezer. Maybe I should have a look later. I feel like doing the red velvet cupcakes again! I love cream cheese frosting!

I have been thinking of what cake I should make for my birthday. FFL says I shouldn't be making my own cake, but I like it and I can have whatever flavour and sinful goodies all packed into the cake, so why not! Right now I'm thinking chocolate. Lotsa lotsa chocolate. Haha. And a few days before that I think I will be making carrot cake with cream cheese frosting for Junior's birthday.

His first birthday! Time flies.

As I was breastfeeding him to sleep yesterday, I can't help but notice how big he's grown, sometimes he acts all grown up-ish like not wanting kisses and is engrossed learning new things, but at times like these, he'll cuddle up to Mama and be the little baby that he is. One of the joys of breastfeeding :)

CNY Bakes

Back from the long weekend! Spent two days fully at home, cooking and baking. So happy. Day 1 was sindhi briyani and Almond London . Day 2 was ayam lemak cili padi and a batch of almost Famous Amos chocolate chip cookies , but I split the batter into 2: hazelnut, white chocolate, cranberry combination and hazelnut, dark chocolate chip combination. I made the cranberry ones first, they taste awesome. But after I ate the chocolate chip one, say bye bye to cranberry! Nothing beats chocolate. And the white chocolate chips somehow dissolved into the batter, melted. What to do, it's just white chips from Redman. I should try a better brand instead.  Happy new year indeed!

White Chocolate Cranberry Oatmeal Bars

I love these! It's like a blondie but to make me feel less guilty, there's oatmeal. Was supposed to make these and freeze for easy morning breakfasts, but seems like they ran out pretty quickly that it didn't require that much freezing. Original recipe here . I made these almost three months ago and I still think about making these again and again. White Chocolate Cranberry Oatmeal Bars 2 1/2 cups old fashioned oats 2 cups flour 1 1/2 cups brown sugar 1 teaspoon baking soda 1 teaspoon salt 1 tablespoon vanilla 2 large eggs 1 1/4 cups butter melted 1 cups white chocolate chips 1 cup dried cranberries This is like one bowl mix so anything goes. Spread batter in two 8x8 square tins, bake for 22 min at 180 degrees Celsius.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Maybe when I was making lava cake . Daiso is evil. It's so cheap you just feel like coming back again! Oh and did I mention there's a $2 weighing scale?! Measures up to a kilo but that's quite alright for baking isn't it! I mean, $2!! Dirt cheap lah. Not sure about the accuracy though. Didn't do much cleaning last weekend, very much spent lazing around at home just like what weekends should be like. I love being at ho
