Addicted

I can't believe this. I'm having withdrawal symptoms from baking. I haven't baked in about two weeks now and I am itching to bake. I have been trawling food (particularly dessert) blogs, always looking for recipes, looking at lipsmacking cakes that just screams out EAT ME.

It doesn't help that I have a new stand mixer that I have yet to try, and ingredients on standby: loads of unused Hershey's chocolates waiting to be chopped/melted, a whole pack of Optima flour in addition to other opened packs of flour, 12 eggs waiting to be cracked and whisked, two little cartons of heavy cream, two (or was it three?) packs of cream cheese, and three packs of butter! Gasp. I do have lots of ingredients hahaha. Oh and I have a box of instant brownie mix too.

So to tame - yes, tame, not satisfy - my baking addiction, I decided to make sago gula melaka last Saturday night. That too, after a looonnng ponder of whether I should bake, do a simple dessert, or just stay out of the kitchen!

I succumbed, especially cos Husband wasn't around to ban me from baking (hurhurhur), it was just me and Junior. Sago gula melaka wasn't as bad as I thought it'd be, but I think next time round I shall add less water to the gula melaka. What I made was kinda a healthy version haha! Oh! And I wanna get nice moulds too! I resorted to using my muffin pan to mould the sago huhu.

So. With all that much ingredients, I think I should bake a cheesecake, no? Before the cream cheese and the heavy cream go bad. Teeheehee. Alright! Time to look for a cheesecake recipe!

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Apam Balik

I love apam balik. The soft one, with lots of corn. So when @khairulaming posted this on his instagram, I bookmarked it. The recipe is not too much until you get sick of eating apam balik, but I do feel it needs some tweaks to get the pancake king version. But not bad for a first try. 2 cups flour 1/2 cup sugar 1 tsp baking powder 1/2 tsp baking soda 2 tbsp melted butter 1 1/4 cups water 1 egg Additional butter for the pan I do feel it needs some salt, more sugar and I shouldn't have liberally made it so thick HAHA. The pan is important too, I kinda burnt some parts of the pancake. Got them bubbles!! This recipe made 2 large pancakes. Also, the filling needs to be sprinkled with sugar liberally (read: 3 tbsp or so), my first try wasn't enough. Pancake was soft even for the next few days after that (kept in the fridge then reheated in the microwave). Husband found it to be acceptable, but I was kinda not okay with it but ohwells. Lontong Goreng Tomyam

When Husband's not around, I become more hardworking HAHAHA. I clean more, I cook more. Saturday I made lontong goreng tomyam for breakfast, and yesterday I made my first ever chicken rice. I even have ingredients to make aglio olio, which I think I'll make either tonight or early tomorrow morning for breakfast. The lontong goreng was a pure experiment, no inferences from recipes and all but it turned out good. Not sure if it's something Husband would eat haha! Lontong Goreng Tomyam 1 packet lontong instant Adabi, cut in cubes 4 tbsp tomyam paste 2 eggs, pre-scrambled Handful of mushrooms Chicken breast, sliced Coriander leaves (I didn't have lemongrass or lime leaves) 1/2-1 tsp salt Fry the tomyam paste in some oil, then add the mushrooms and chicken to cook them.
