Addicted

I can't believe this. I'm having withdrawal symptoms from baking. I haven't baked in about two weeks now and I am itching to bake. I have been trawling food (particularly dessert) blogs, always looking for recipes, looking at lipsmacking cakes that just screams out EAT ME.

It doesn't help that I have a new stand mixer that I have yet to try, and ingredients on standby: loads of unused Hershey's chocolates waiting to be chopped/melted, a whole pack of Optima flour in addition to other opened packs of flour, 12 eggs waiting to be cracked and whisked, two little cartons of heavy cream, two (or was it three?) packs of cream cheese, and three packs of butter! Gasp. I do have lots of ingredients hahaha. Oh and I have a box of instant brownie mix too.

So to tame - yes, tame, not satisfy - my baking addiction, I decided to make sago gula melaka last Saturday night. That too, after a looonnng ponder of whether I should bake, do a simple dessert, or just stay out of the kitchen!

I succumbed, especially cos Husband wasn't around to ban me from baking (hurhurhur), it was just me and Junior. Sago gula melaka wasn't as bad as I thought it'd be, but I think next time round I shall add less water to the gula melaka. What I made was kinda a healthy version haha! Oh! And I wanna get nice moulds too! I resorted to using my muffin pan to mould the sago huhu.

So. With all that much ingredients, I think I should bake a cheesecake, no? Before the cream cheese and the heavy cream go bad. Teeheehee. Alright! Time to look for a cheesecake recipe!

CNY Bakes

Back from the long weekend! Spent two days fully at home, cooking and baking. So happy. Day 1 was sindhi briyani and Almond London . Day 2 was ayam lemak cili padi and a batch of almost Famous Amos chocolate chip cookies , but I split the batter into 2: hazelnut, white chocolate, cranberry combination and hazelnut, dark chocolate chip combination. I made the cranberry ones first, they taste awesome. But after I ate the chocolate chip one, say bye bye to cranberry! Nothing beats chocolate. And the white chocolate chips somehow dissolved into the batter, melted. What to do, it's just white chips from Redman. I should try a better brand instead.  Happy new year indeed!

White Chocolate Cranberry Oatmeal Bars

 I love these! It's like a blondie but to make me feel less guilty, there's oatmeal. Was supposed to make these and freeze for easy morning breakfasts, but seems like they ran out pretty quickly that it didn't require that much freezing. Original recipe here . I made these almost three months ago and I still think about making these again and again. White Chocolate Cranberry Oatmeal Bars 2 1/2 cups old fashioned oats 2 cups flour 1 1/2 cups brown sugar 1 teaspoon baking soda 1 teaspoon salt 1 tablespoon vanilla 2 large eggs 1 1/4 cups butter melted 1 cups white chocolate chips 1 cup dried cranberries This is like one bowl mix so anything goes. Spread batter in two 8x8 square tins, bake for 22 min at 180 degrees Celsius. 

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Maybe when I was making lava cake . Daiso is evil. It's so cheap you just feel like coming back again! Oh and did I mention there's a $2 weighing scale?! Measures up to a kilo but that's quite alright for baking isn't it! I mean, $2!! Dirt cheap lah. Not sure about the accuracy though. Didn't do much cleaning last weekend, very much spent lazing around at home just like what weekends should be like. I love being at ho
