German Cookies

Today is the first day of maternity leave. Baby still show no signs of moving out yet. I hope tomorrow all goes well!

Have some time to kill, and I would love some cookies or cake in my kitchen when I get back from the hospital, so I decided to make the long overdue German Cookies.

Ingredients

250g butter
80g icing sugar, sifted (5 heaps tbsp)
250g potato starch
160g flour (I used cake flour)
  1. Sift the icing sugar and flour and mix with the butter. Add in the potato starch and mix them altogether. I mixed them using my hand! Heehee
  2. Once consistent, roll into small balls with diameter of 1-2cm, and press down using a fork.
  3. Bake at 160 degrees Celsius, for 15 minutes.


This recipe is pretty popular, and actually I doubled the recipe because I have 250g butter. And that only made 100 pieces only! Even with double the recipe, I don't think it's enough! I can't help but pop them into my mouth! This cookie can definitely be a Hari Raya kuih, but I would have to make many batches of it hahaha.

Back from the long weekend! Spent two days fully at home, cooking and baking. So happy. Day 1 was sindhi briyani and Almond London . Day 2 was ayam lemak cili padi and a batch of almost Famous Amos chocolate chip cookies , but I split the batter into 2: hazelnut, white chocolate, cranberry combination and hazelnut, dark chocolate chip combination. I made the cranberry ones first, they taste awesome. But after I ate the chocolate chip one, say bye bye to cranberry! Nothing beats chocolate. And the white chocolate chips somehow dissolved into the batter, melted. What to do, it's just white chips from Redman. I should try a better brand instead.  Happy new year indeed!

White Chocolate Cranberry Oatmeal Bars

 I love these! It's like a blondie but to make me feel less guilty, there's oatmeal. Was supposed to make these and freeze for easy morning breakfasts, but seems like they ran out pretty quickly that it didn't require that much freezing. Original recipe here . I made these almost three months ago and I still think about making these again and again. White Chocolate Cranberry Oatmeal Bars 2 1/2 cups old fashioned oats 2 cups flour 1 1/2 cups brown sugar 1 teaspoon baking soda 1 teaspoon salt 1 tablespoon vanilla 2 large eggs 1 1/4 cups butter melted 1 cups white chocolate chips 1 cup dried cranberries This is like one bowl mix so anything goes. Spread batter in two 8x8 square tins, bake for 22 min at 180 degrees Celsius. 

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Maybe when I was making lava cake . Daiso is evil. It's so cheap you just feel like coming back again! Oh and did I mention there's a $2 weighing scale?! Measures up to a kilo but that's quite alright for baking isn't it! I mean, $2!! Dirt cheap lah. Not sure about the accuracy though. Didn't do much cleaning last weekend, very much spent lazing around at home just like what weekends should be like. I love being at ho
