The Fun Never Stops

Today's amazing. Just amazing.

This morning's low tide, like negative 0.2 metres low, perfect day to go Chek Jawa! Yeah, I know, last week I just went. Hahahaha.

But but.

It rained.

HEAVILY.

It didn't stop us from doing the board walk! Hehe. So of course we were soaking wet. Like really really wet. The winds were pretty strong too, blowing everywhere. My jeans were stuck to my legs, and I water was squishing out everytime I stepped on the ground. Wahahahaha. We decided to go on with it since we were there already, doesn't matter if people think we're crazy, cos we had fun in the rain :) Couldn't see starfishes and crabs cos it's raining, duh, they wouldn't wanna be out bathing in the rain rite, but we saw this prawn thingy, and crayfish. I was told it's a crayfish. Haha. There's also seagrass, and barnacles. The thing about doing the boardwalk in the rain is, there's no one else! Haha! Shiok rite! :D

After that we were in town to find part of my mummy's present which we didn't get cos there wasn't any suitable ones, but guess WHO we saw!!! Big Boss and Datin!! Muahahahahaha. Must be dating lah... Hehe so cute :) I was like, haiya hold hands lah hold hands!! HAHAHAHAHA. But they didn't. Oh well. We saw them first, but we were still thinking, should we approach them or pretend we didn't see anything. But in the end we did.

Last stop for the day (at least for me) was the florist at Thomson to get my mummy her present, orchids! Yanti!! I found the cold room! Muahahahaha. So we got orchids for my mum, I got tulips, and I got pretty pretty white roses for someone else. Heh. I tell you!! The roses are sooooo pretty! They're white, with a tinge of peach. Prrrreeettttyyy rite! Pity I don't have a picture for that. Haha. Neh mind. I have my tulips :D

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Can't be choosy for $2 ramekins! There were white ones, but super small white ramekins. And pie tarts too! Oooh so tempting! But I don't know when I'll make tarts hurhur. Actually I'm still thinking what I should bake using these ramekins. I remember having one of those "I wish I had ramekins right now" moments but I can't remember when. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone. 

Chicken Rice (just the rice)

Need to jot this down! I have an earlier recipe for Hainanese Chicken Rice but this version is without proper chicken stock hence it's fuss free. Chicken Rice (just the rice) Skins from several boneless chicken thighs 2 tbsp sesame oil 1 lemongrass, bruised 1 onion, sliced 8 garlic cloves, pounded 2 inches ginger, pounded 2 cups rice, washed 3 cups water + 2 cubes chicken stock 1/2 tsp salt 5 knots of pandan leaves Fry the chicken skin until slightly crispy and the oils ooze out, together with the sesame oil. Add in the lemongrass and onions and fry until golden. Add in garlic and ginger. Add in rice and fry for a few minutes before adding the chicken stock water, salt and pandan leaves. Let it come to a boil, then reduce heat to a simmer and let it cook for about 15 minutes. I used 4 cups water instead and it was kinda soggy so I'm guessing 3 cups should be sufficient.
