Banana Walnut Muffins

I took overripe bananas from my mum last Friday to make cake, and it turned out wonderful!

Made banana walnut muffins and once again I used another recipe (hurhur) and this time I promise I will not look for any other banana cake recipes huahuahua.

Cos this one is husband approved!

I like this one because it uses oil instead of butter and less than my mum's banana bread. I added 2 splashes (haha what a unit of measurement) of buttermilk to make it moist and fluffy.

Banana Walnut Muffins from Tyler Florence

3/4 cup oil (they used melted butter)
2 cups flour
1 1/2 tsp bicarbonate soda
1 cup sugar
1 bowl mashed overripe bananas (5 pieces)
2 eggs
2 splashes haha of buttermilk, maybe about 1/3 cup
chopped walnuts

In the big bowl, mix together flour, bicarbonate soda and sugar. Mix the wet ingredients together: oil, eggs and buttermilk. Buttermilk should be added here but when I was doing, I added in last because the batter was thick and I wanted it to be more runny. Add wet ingredients into dry ingredients and mix well. Add in chopped walnuts. Bake at 20 minutes at 170 degrees Celsius.


Nothing like making cakes or muffins using pisang berangan or pisang emas. I don't like those Dole bananas they sell at supermarkets, bland and no chewy texture.

Daiso Ramekins

Finally finally went to Daiso!! Wanted to go there for ages already! The first thing I came in, went to the cooking section. Found my ramekins! But they're not white. Oh wells. Apam Balik

I love apam balik. The soft one, with lots of corn. So when @khairulaming posted this on his instagram, I bookmarked it. The recipe is not too much until you get sick of eating apam balik, but I do feel it needs some tweaks to get the pancake king version. But not bad for a first try. 2 cups flour 1/2 cup sugar 1 tsp baking powder 1/2 tsp baking soda 2 tbsp melted butter 1 1/4 cups water 1 egg Additional butter for the pan I do feel it needs some salt, more sugar and I shouldn't have liberally made it so thick HAHA. The pan is important too, I kinda burnt some parts of the pancake. Got them bubbles!! This recipe made 2 large pancakes. Also, the filling needs to be sprinkled with sugar liberally (read: 3 tbsp or so), my first try wasn't enough. Pancake was soft even for the next few days after that (kept in the fridge then reheated in the microwave). Husband found it to be acceptable, but I was kinda not okay with it but ohwells. Stir Fried Udon

My baby loves this! Recipe adapted from here . 1 onion, sliced 3 cloves garlic, minced 2 packets udon noodles 1 carrot, julienned  250g mushrooms 2 chicken fillet, sliced 2 stalks spring onions 3 tbsp dark soy sauce 2 tbsp oyster sauce 1 tbsp sushi vinegar (replacement for mirin) 2 tsp brown sugar 1 tsp artificial vinegar Recipe doesn't call for onion and garlic but those are pretty much base ingredients for stir fries so might as well. Made this for quick lunch for the kids since they were home alone.
